Puff pastry





Ingredients.                                                        Quantity

1. Refined flour.                                                      450 grams
2. Lemon juice.                                                       2 tbsp
3. Margarine.                                                          450 grms
4. Ice cold water.                                                   As needed
5. Salt.                                                                      1 tbsp
6. Filling.                                                                 As desired
7. Eggs for Coating                                                2 tbsp


Method

1. Sieve flour with salt.

2. Add cold water and lemon juice to flour and need to a smooth soft dough.

3. Keep the dough covered under a wet cloth for at least 30 to 35 minutes.

4. Cream fat with about a tbsp of flour and make into a square block. Wrap in grease proof paper and cool in Refrigerator.

5. Roll the dough into a square and place block of fat in the centre.

6. Fold down all flour corners overlapping each centre.

7. Turn upside down . Roll into a rectangle and fold into three , being careful not to let the fat escape.

8. Rest pastry in refrigerator for atleast 15 minutes.

9. Repeat the process four times more , resting pastry for 15 minutes after each rolling.

10. Let it rest for one hour after the final rolling.

11. Roll , cut and put on watered tray.

12. Brush with egg and bake at 232°c .
