Beef stroganoff recipe




Ingredients                                                       quantity        

1. Fillet of beef / mutton leg boneless                400 grams 
2. Shallots finely chopped.                                   25 grams 
3. Dry white wine.                                                  5 ml
4. Butter / oil.                                                           50 grams 
5. Cream.                                                                  125  ml
6. Lemon juice.                                                       1/4 lemon
7. Salt & pepper.                                                     To taste 
8. Parsley chopped.                                                For garnish


Method

1. Cut the meat in the strips  about 2 inches long and Sprinkle salt and pepper.

2. Place butter in a saute pan over fierce heat, add the beef strips and allow to cook rapidly for a few seconds , beef should be brown but under done.

3. Drained Amit strips into a colander. Add the shallots cover with a lid and allow to cook gently till tender.

4. Drain of extra fat, Add wine and reduce one third.

5. Add cream

6. Add lemon juice and the beef strips, don't reboil.

7. Cornet the seasoning, serve sprinkled with chopped parsley, accompanied with riapillaf.

8. Serve beef stroganoff with some stroganoff sauce.
